For this wine, the Vignerons have chosen a fermentation with indigenous yeasts, also respecting, for the work in the cellar, the rhythm of the lunar calendar. It ages in steel in contact with its own yeasts for a full year, before being bottled with a minimal amount of sulfur. The result is a wine of great complexity, reminiscent of ripe apple and citrus fruits, citrus fruits and spices.
